So we have a bit of everything as far as our customers are concerned. I’d say we attract schools. And we love that too, Eh? Because schools, when it comes to kids, that’s where education begins. That’s where we teach them about our values, our traditions in Quebec, so we love schools. We also welcome families. We welcome schools and senior’s residences. We welcome different groups, including businesses and colleagues who get together to eat lunch or supper at the cabin. They have a good time together. So we really have a very diverse clientele.
Nowadays, not every family has access to a maple grove. So, the fact that they continue to come, you know that they experienced this when they were young. But they continue to come year after year, bringing their children, bringing their grandchildren. Well, that’s the beauty of a sugar bush. You know that it will continue over time and that people will come back, that’s always very nice.
You know, I have two wonderful children who are with us every day, who help us every day with the processing that goes on here and when we go to different public markets. So, first of all, you know, we always have this little niggling thought in the back of our head that says, “I’d like to pass it on to him.” I’d like to enable him to also discover other facets of maple too, because, you know, things may continue to evolve. But of course, that’s the little side we have, but if it’s not that, well I think we’ll do what we did here. We had people who helped us to acquire a maple grove, people we didn’t know, but who let us take our place, who helped us, who supported us in the first year. So, of course, we want to do the same thing.
Agriculture is important in Quebec because it feeds the population. And maple syrup production is part of that. It’s sugar, yes, but natural sugar that we can use in all our meals, from appetizers to desserts. So promoting this, promoting these products, promoting agricultural businesses, well, that’s what motivates us to continue, because I think we have everything to gain by working locally to feed ourselves.
