Sugaring-off season
Sugar Making in Canada, Cornelius Krieghoff (1815-1872), print. Library and Archives Canada.
In the centre, a man wearing a blue hat and a red sash stirs a large cauldron of maple sap, suspended over a fire. The wooden shelter has an opening in the centre to allow steam from the cauldron to escape. To the right, a man wearing a fur hat pours the maple sap collected in a bucket into a large barrel. To the left, a woman is preparing to make maple sugar loaves. Bark containers (cassots) and spouts (goutterelles) can be seen at the base of the trees, where they were used for collecting maple sap.
