The whole family usually joined in when it was time to take the cod out of the salt and spread them on the flakes to dry in the sun. Women usually took care of the fish during the drying process.

The fishermen brought their cured catch to the local merchant. One local merchant's plant in Winterton that shipped fish was E.J. Green and Company Limited.

In the earliest days the merchants were based in Trinity and Poole but at the beginning of the twentieth century local Winterton merchants became fish buyers. The major operation was buying fish from the fishermen and in return outfitting them for the coming season. Transactions traditionally were not based on money but on credit.
