Interview with Bill Evans, Winemaker at Rockway Glen Winery- Bill Explains that Wine Making Depends on Grape Growing

And the great thing about how you produce wine really hasn't changed in the last eight hundred years. The process is absolutely the same as it has been all the way along. What has changed of course is the technology and how things are done; we can discuss that briefly too. Basically you start off with the same thing. The grape or wine production actually starts off with growing the grapes. Like it is an old cliché but wine starts in the vineyard, it doesn't start when you start to process the grapes, it starts long before that. Because first off, it is all about getting the right grape into the right soil conditions, and alignment with the sun. And the breezes and all of that kind of stuff. It's dependent upon where you are within the Niagara Peninsula and whether you are on the lakeshore or whether you are on the bench.
